The pantry line of a New York restaurant group behind Hart's, Cervo's, The Fly and Eel Bar, launched in 2021 by Nialls Fallon, Nick Perkins and Leah Campbell. It grew out of the tinned-seafood bar Fallon opened in the East Village in 2013, where he began importing directly from canneries rather than distributors. Minnow curates sardines from Spain, Icelandic cod liver, Alaskan sockeye, Danish smoked trout and mussels in escabeche, sourced for sustainability and packed simply.
