Emily Wilder moved back to Whidbey Island, where she grew up, in 2020 and built Salinity Seafood & More around the Olympia oyster, Washington's only native oyster and one that came close to extinction.

She signs herself the SeaEO, and the shop runs partly as advocacy: free oyster lectures, a monthly Whidbey Oyster Network meet-up, and a supplier list weighted towards Pacific Northwest beachfront farmers and small smokehouses.

The retail counter shares space with the Island Shakespeare Festival's Bard's Boutique in the Bayview Cash Store outside Langley.
