Tail

The narrow tail end of a larger fish, sold on its own. It is leaner and firmer than the belly or the loin, closer in grain and lighter in cost for the same reason. It holds up to a little heat or a sharp dressing where a fattier cut would fall apart. The lean end of the fish, and priced like it.
