These sardines are actually grilled, passed over a flame before packing so the skin carries real char, then set in olive oil with a scant 1% mix of pink, white, black and green peppercorns and coriander. The smoke plays against the peppercorns' heat, and La Perle des Dieux notes the flavor rounds out with a year or so in the cupboard; eat them straight from the tin with a soft-boiled egg.
