Sardines aux olives de Nice

These sardines are first briefly cooked in a bath of sunflower oil before being canned in olive oil with whole AOP Nice olives, pits and all, which keeps the olives' brine distinct rather than blended into a paste. La Belle Iloise treats it as an aperitif tin: eaten straight from the can on a good piece of bread, working around the olive pits as you go.
