Whole Breton sardines in extra virgin olive oil, finished with a scattering of zaatar, the Levantine blend of sesame, sumac, thyme and oregano, giving the oil a herbal, slightly sour edge. Good on warm bread that can soak up the seasoned oil, or forked straight over a green salad.
