Sardines Pitomaïl

Whole sardines, hand-worked and fried before canning rather than simply steamed, then packed in a pitomaïl sauce of tomato, garlic and a touch of chili pepper, cut with both peanut and olive oil. The chili sits more as warmth than heat, so the tin still works spooned onto toast or forked straight out, the sauce doing the seasoning.
