Sardine millésimées 2017 – Mme Perle LA PERLE DES DIEUX

This is the 2017 vintage of La Perle des Dieux's "Mme Perle" cuvée, wild sardines packed simply in extra virgin olive oil and salt, then held back from release the way a cellared wine is. Nearly a decade in the tin has let the oil and fish meld into something mellower than a fresh-packed sardine, best appreciated straight from the tin with plain bread.
