A family-owned operation in Santoña founded in the late 1990s, drawing on four generations of anchovy expertise from the surrounding Cantabrian coast. Anchovies are caught in spring at their peak fat content and cured in sea salt before the long hand-filleting process. One of the reference Cantabrian anchovy producers for quality within a modest scale.
