A Cantabrian anchovy producer based in Laredo, one of the cluster of Cantabrian towns where the anchovy curing tradition has been maintained for generations. Hand-filleted anchovies matured in olive oil, available in the international gourmet market. Part of the dense artisan anchovy ecosystem centered on Santoña and the surrounding coast.
