Whidbey Island Seafood Company runs Seabolt's Smokehouse in Oak Harbor, at the north end of Whidbey Island in Washington's Puget Sound. Wild-caught Alaskan black cod is hot-smoked there over alder, then canned shelf-stable with a pull-tab lid in versions like Garlic Pepper and Zesty Heat. The cans keep four to five years and carry 30 grams of protein each.
