Conservas Currimar

Nieves Medina García and Placer Rodríguez turned a family habit of preserving the catch at home into Conservas Currimar in 2012, setting up their workshop in Xove, a small fishing village on the Lugo coast of Galicia. The pair pack everything in glass rather than tin, reasoning that glass is packaging that doesn't transfer residue into the conserve, and they buy their bonito del norte, octopus and oysters from certified boats and local shellfish gatherers. Beyond the classic lines they've built a prepared-dish range called Delecta Mare, putting dishes like marmitako and octopus with beans into the same glass jars.
