La Reina del Cantabrico
Maite Pérez, a Bilbao-born hotelier with no background in canning, founded La Reina del Cantábrico in Santoña around 2015, one of the youngest houses in a town whose canning trade dates to nineteenth-century Sicilian immigrants. With a staff of about eighteen, the cannery has twice won Best Anchovy of Cantabria at the Cofradía de la Anchoa tasting, in 2023 and again in 2026.
