The comfort preparation. Fish stewed or packed in a tomato sauce, sometimes plain, sometimes with onion, pepper, or a little spice. It is the everyday Portuguese and Spanish way with sardines and mackerel, and it leans homely rather than refined, the tin you eat over rice or straight with bread on a weeknight. The sauce is half the point: it softens the fish and becomes the dish. Less about showcasing the fish than about feeding you well.
