The medium here is tomato rather than oil, close to sixteen percent of the tin, with olive oil sitting behind it doing the carrying. Tomato tightens sardines a little and lends an acidity that reads brighter than either of the oil packs in the same range. Built into a sandwich, sauce and all, it is the most straightforwardly useful of the three.
