This pâté is built almost entirely on mussels blended smooth with sunflower oil and a light hand of spices, no tomato or vinegar cutting through it, so what comes across is straightforwardly briny and salty. It spreads easily and holds its saltiness well against something plain, best on a good cracker rather than anything that competes with it.
