Ventrêche de thon à l’huile d’olive bio

This is the ventrêche, the fatty belly cut of the tuna, softer and richer than a standard loin fillet, packed here in organic olive oil that lets that richness come through. Best kept simple: forked over a boiled potato, where the oil does most of the work.
