
Sardines à l'huile de homard
Groix & Nature makes its lobster oil by steeping blue lobster shells, along with shallot, carrot and garlic, in grapeseed oil, then packs the sardines whole in it, so the fish carries real shellfish flavor rather than a synthetic lobster note. The producer's own advice is the right one here: lay the sardines gently over a warm boiled potato and spoon the lobster oil over the top.
