Petinga are the smallest class of Portuguese sardine, packed here whole in a plain olive oil rather than the larger fish more common in the tin. The small size gives a softer, more delicate bite than a standard sardine, with just enough of the fish's own brine coming through the oil to season it. Lay the fillets across buttered toast and let the oil do the dressing.
