Carapau, the small oily scad that's a mainstay of Portuguese canning, is packed here with nothing but extra virgin olive oil and salt, letting the fish do the talking. Wild caught by purse net off the Algarve, it's simplest spooned warm over plain rice, the oil turning into its own sauce.
