Matosinhos
The heart of Portugal's canning industry, on the coast just north of Porto. When the sardine boom drew European entrepreneurs to Portugal in the early twentieth century, Matosinhos became the centre of it, and at its height the town and surrounding Leixões port supported dozens of factories. Conservas Pinhais, founded in 1920, still hand-prepares every tin and is the only mainland cannery to perform the entire process by hand, now also open as a working museum. Ramirez, the world's oldest operating fish cannery (1853), and La Gondola, founded by Italians in 1940, both have roots here, alongside Conservas Portugal Norte and a deep roster of labels including Nuri and Pinhais. Sardines, mackerel, and tuna packed in olive oil are the defining products, often layered by hand with pickles and spices.
