Bernardo Ortiz de Zárate started salting anchovies in Ondarroa in 1891, working with fish from the Bay of Biscay he knew from years as a fisherman. After his death, his wife renamed the company Viuda de Ortiz e hijo; by 1956 the sons had incorporated it as Conservas Ortiz. The red, gold, and blue tin is one of the most recognizable packages in the Spanish pantry.
