Casa Ballester

Casa Ballester has held the same stall in Murcia's Mercado de Verónicas since 1920, when the grandfather of the present owner, Antonio Luis Ballester, took it on.

The counter is a Murcian one first, built on salazones: extra-grade mojama in whole loaves and half loaves, salt-cured bonito loins, dried cod, smoked tuna. Behind them sits a deep bench of Galician and Cantabrian canning houses alongside the family's own anchovy label, La Joya de Santoña, which they select and prepare in Santoña itself season by season. The third generation opened the online shop at the centenary and ships across Spain in 24 to 72 hours.
