The Northern European preparation, herring or sardines in a mustard sauce, sharp, creamy, and a little sweet. It is a Scandinavian and German staple, eaten on rye, and the mustard does for the fish what tomato does elsewhere: softens it and gives it a sauce. Assertive and savoury, a cold-table preparation more than a cooking one.
