Small Galician sardines packed whole in olive oil, the sardinilla grade left to keep maturing after canning rather than sold at its peak the day it's sealed. Given time, the oil carries more of the fish's own flavor into itself, so it eats well simply, tipped over a boiled potato where the oil is the only dressing needed.
