Sardines Butter & Buckwheat seeds – LA BELLE ILOISE

Breton sardines packed in salted butter with toasted buckwheat seeds and a shred of royal kombu, built to recall the batter and browned butter of a Breton crêperie rather than a plain tin of fish. The buckwheat keeps some bite against the soft butter, and a dash of cider vinegar stops the richness from turning heavy. Warm it and spread it over dark rye toast, where the toasted grain on both sides meets in the middle.
