Unlike most tins from this cannery, these sardines carry no oil at all, marinated instead in Muscadet white wine with lemon, carrot and gherkin for a sharper, more acidic profile. Serve it the way a wine-marinated fish is meant to be eaten, cold, spooned over a cold rice salad, or straight from the tin with bread to soak up the marinade.
