Whole Portuguese sardines are canned in a teriyaki sauce built from soy, sugar and wheat flour rather than the usual olive oil or tomato, giving the fish a sweet, dark glaze instead of a Mediterranean one. The sauce is thin enough to soak into a bowl of Japanese-style steamed rice, which is the simplest way to use all of it rather than leaving it in the tin.
