Lomos de Bonito del Norte en Escabeche Conservas Catalina 120g

The same Cantabrian bonito del norte loins, pole and line caught in summer, but here stewed in an escabeche of wine vinegar, carrot, bay and paprika instead of plain oil, which gives the fish a sharper, spiced edge under its natural sweetness. Serve it cold, tipped over a cold rice salad so the vinegar dresses the rice as well as the fish.
