Fresh anchovy fillets from the spring costera, when the fat is at its lowest, marinated in wine vinegar and then packed in sunflower oil. This is a semi-preserve and the opposite of a salt cure: the flesh stays white, soft and sharp rather than going brown and dense. Eat them cold, over a boiled potato.
