Lomo Alto de Bonito del Norte en Escabeche (Albacore Tuna in Pickle sauce) _ AGROMAR

Lomo alto is the upper loin, the prime dorsal section above the lateral line, and it is packed here in a traditional escabeche of extra virgin olive oil, cider vinegar, onion, garlic, bay and black peppercorn. Cider vinegar is the Asturian choice and it is softer and more apple-scented than the wine vinegar most escabeches use. Eat it cold, over a cold rice salad.
