Tinned Mussels Escabeche - Pescarias Do Algarve

Rope-grown mussels from the open sea off the eastern Algarve, cooked and then set in an escabeche built on olive oil rather than the sunflower oil most Spanish versions use, which leaves the pickle rounder and less sharp. The mussels stay plump and keep a clean bite against the vinegar. Eaten cold they are best folded through a cold rice salad, the escabeche standing in for the dressing.
