Bonito del norte fried in olive oil first, then packed whole by hand in a traditional escabeche of vinegar, oil and salt, a process kept distinct from the plain oil-packed tins in the same range. The frying firms the flesh before the escabeche's sharp cure gets to it, so the fish stays intact rather than flaking apart in the vinegar. Serve it cold, through a cold rice salad dressed with nothing but the escabeche itself.
