Preparation
InOil
Oil that is not olive. Sunflower, rapeseed, or generic vegetable oil, a lighter and cheaper packing medium than olive oil, common on everyday tins and large-format packs. It does the same job, sealing the fish from air and keeping the flesh moist, but it stays in the background where good olive oil would add its own flavour. A practical preparation rather than a showcase one: fine for cooking with, for tuna headed into a salad or sandwich, where the oil is drained anyway.
