Pieces broken from the larger cuts rather than kept whole, most common with tuna. Chunks are less uniform and usually cheaper, which makes them the honest choice when the fish is going to be flaked anyway, into a salad, a pasta, a sandwich. You lose the look of an intact loin and none of the fish. The practical cut.
