Cut
Loin
The loin is the prime muscle of the fish, firm and meaty, a premium cut a step below ventresca in richness.
About 123 loin tins, mostly tuna. It holds its shape, so it plates well: laid on grilled bread, over a potato, built into a salad, dressed with its oil. A cut, not a species, and one that wants a plain base to show its quality.
