Ventresca is the belly, the loosest and fattiest cut, prized above all others and priced to match.
About 319 ventresca tins, mostly tuna and bonito. It is meant to be lifted out in whole pieces, not flaked: laid on toast, over a boiled potato, or straight from the tin, dressed with nothing but its own oil. A cut to savor plain, and a cut, not a species; albacore, bonito and bluefin all come this way.
